Chef Fabio

Chef Fabio Vaccarella was born and raised in Palermo, Sicily and it has been said that his passion for cooking began in the cradle. He absorbed his fervor for cooking from his first mentors – his father and three older brothers. When he was only 14 years old, he started helping his father in the kitchen and soon after gained additional experience working at various restaurants in Sicily. In his early 20’s he went to Rome and completed his studies at the “Culinary School” (Scuola di Cucina Per Avviamento Professsionale) where he trained as a chef.

In 1999, Chef Vaccarella took his culinary passion to Miami where he broke new ground while working as a sous-chef, at an award-winning restaurant in Miami Beach until 2002. This experience opened new horizons for Vaccarella – savoring the “melting pot” of cultures that Miami had to offer exposed him to the culinary influences from Asia, South and North American cuisine, all of which are now reflected in his signature dishes.

In 2002 he took over as Executive Chef in the newly opened and very successful “Bacco Ristorante” in Detroit, Michigan. He was able to put his experience and innovative ideas in his creative cuisine by surprising his guests with unconventional modern dishes, while staying true to his Italian origins.

In late 2003 love led him to Munich, Germany where he worked until 2005 at the elegant Italian restaurant “Perazzo” where he took over the kitchen line in the popular “La Stanza”. Soon after, the owner, Roland Hotzinger, offered Chef Vaccarella the position of Executive Chef at the design hotel in Munich “La Maison”. There his culinary creations fit perfectly with the philosophy and lifestyle of the House.

Later in 2008, Chef Vaccarella decided to explore new opportunities and he flew back to the U.S., namely Miami. Shortly after arriving back in Miami, he met the owner of Puntino Restaurants, Cristoforo Pignata, an Italian entrepreneur with several years of experience in the hotel and hospitality industry. The two decided to join forces and with Chef Vaccarella’s knowledge and experience in the kitchen, Puntino Restaurant has continued to break new ground and expand its brand into successful ventures. One of the ventures is Puntino Catering, which has become the go-to catering company on Key Biscayne, Miami and throughout South Florida.
